Wednesday again.

Half way through the week again!  I am very behind this week, with my house work and stuff that I wanted to get done for me.  Yesterday I did nothing except dinner and today all I have done is to clean the kitchen.  Luckily though, my headache is on it's way out.  I just need to be careful.  I am going to take it easy this afternoon, maybe just read my book.
I am going to cook dinner though.  I am trying another new recipe;  Creamy haddock and baked potatoes.  It's from Good Food magazine.  Last week I made a prawn pilau which was really quick and very nice, not too hot.  Yesterday, I made a creamy chicken korma which was a recipe on the side of the jar of curry paste!
It couldn't have been cheaper or easier and it was really nice.  Everyone loved it, including me and I always say I don't like curry, but this is mild.  You get a couple of onions, chop then up and fry until soft, stir in 2 big spoonfuls of Pataks korma paste, then stir in 4 chicken breasts all chopped up into bits.  Stir it all round for 5 mins until chicken turns white.  Add 200ml of cold water.  Bring to boil, cover and simmer for 20 minutes.  Stir in a handful of chopped coriander and a small tub of single cream.  Serve with basmati rice.  Quick, cheap, easy and delicious.
Well, that's about all for now.  I don't want to spend too long on here in case it sets my head off.
